Mocha Walnut Slice

These have been a family favourite for many years. They’re moist and fudgey like a brownie, but not overly sweet or chocolatey. I like to pack them full of walnuts; which have a soft texture for a nut and complement the flavour of mocha well. It also makes them a little better for you so you can eat twice as many, yes?

Mocha Walnut Slice

  • 125g butter
  • ~100g milk or dark chocolate, chopped
  • 3-5 tsp instant coffee, crushed to a fine powder
  • 1/2 cup caster sugar
  • 1 egg, beaten lightly
  • 1 tsp natural vanilla essence
  • 1 cup plain flour
  • ~1 cup chopped walnuts
  • Melted chocolate to drizzle

Preheat oven to 150C fan-forced.

Melt butter gently in a saucepan. Add chocolate and stir until melted. Add coffee and stir until dissolved. Pour into a mixing bowl.

Add sugar, egg, vanilla and combine. Sift in flour, add walnuts, mix thoroughly.

Spread evenly in a square cake or slice tin lined with baking paper. Bake for 20 minutes. It will be very soft when it comes out of the oven, but will harden. Cool in tin.

Drizzle with melted chocolate if desired. Cut into slices.
